PROCESSING PROCESS (HACCP STANDARDS)* 1. *Reception:* Fresh cassava <24h harvest, sorting, weighing 2. *Peeling/Washing:* 3 potable water washes 3. *Grating / Grinding:* Stainless steel grater 500kg/h 4. *Fermentation:* 48-72h in food-grade bins (for attiéké/gari) 5. *Pressing:* Hydraulic press water extraction 6. *Drying:* Hybrid solar dryer + gas dryer 60°C (not in direct sun on ground) 7. *Sieving / Granulation:* Granulated gari / flour sieving 8. *Roasting (gari):* Rotary oven 9. *Packaging:* Vacuum sealer + batch / expiry date labeling *D.
